Festive Finger Food: Ways to Utilize Christmas Leftovers into NYE Canapes

Finger food doesn't have to be fancy, so New Year's presents a perfect opportunity to use up what's left. The main guideline is to stick to items to just one bite—no one wants to handle a fork. People are looking for a big hug of comfort food with a luxurious touch.

If you have a bit of cured fish left, layer it on blinis and top it with lumpfish caviar. Small patties are also an ideal choice: Whether you've got remaining fish or flaked salmon, fold it through mashed potato, blend with dill, lemon, and caramelized onions, then coat in panko and fry until golden.

You could also get creative with Spanish croquettes. Prepare the white sauce a few days ahead, then use remaining pork, chicken, or mushrooms for the filling. Whizz old bread into breadcrumbs to cover them, then fry. Savoury pastry fillings are another natural home for those crumbs, or use them as a jacket for chicken pieces. For flavour, all you need a bit of citrus zest and aromatic herbs, and they'll taste so much more. As an aside, croissants make superb coatings, too.

One beloved treat at this time of year is a leftovers sandwich, and that can continue after Boxing Day. Get some ham and turkey in an airtight container and store in the freezer. While you're at it, set aside some berry relish and honey ham glaze in the fridge. When needed, defrost the meat, then place it in a preheated oven with the saved glaze for a short time. Cool and cut into thin pieces, then arrange on top of some artisan bread and assemble mini sandwiches with lots of tangy sauce. Slice into bite-sized pieces for a winner.

Leftover turkey, meanwhile, could be turned into a spicy, crisp salad. There’s always a bit of turkey leg left over, and it's ideal for something full of flavour. Shred the meat, then fry it slowly in a pan, and toss with remaining sauce thinned with citrus juice, a spoonful of soy and a little spicy oil. Garnish with chopped herbs and some green onions, and present in small lettuce cups.

Transforming Leftover Vegetables

Veg, meanwhile, can be dressed up and ready to party with a big batch of fried potato cake. Mix all your remaining vegetables with herbs, then add salt and pepper and add flour. Cut out portions to roughly the size of small rounds, then store in the freezer. Reheat in a preheated oven for a short time and top with your choice of topping—perhaps roast beef and sharp horseradish. A word to the wise, though: save a stash for a late breakfast the next day.
